Summer Quinoa Salad

1 cup quinoa

2 cups water

1 vegetable bouillon cube

2 tbsp dried minced onion

1/4 cup lemon juice

1/4 cup vegetable oil

1/2 tsp salt

1 diced long English cucumber

1 diced red bell pepper

1 diced yellow bell pepper

1 diced orange bell pepper

1/3 cup toasted pine nuts

1-2 tbsp fresh mint, chopped

1-2 garlic cloves, minced

In a pot, combine quinoa with water, vegetable cube, and dried onion. Bring to a boil then lower heat to simmer for 20 minutes or until tender. Cool in fridge overnight. Mix lemon juice, oil and salt to make dressing. Add the dressing to quinoa and mix in all other ingredients
